Battonage – stirring the expired yeast cells to create mouthfeel and a “creamy” texture to the wine. Whole cluster pressed. Stainless Steel Egg and Barrel Fermented. Minimal winemaking intervention.
WITH PASTA PRIMAVERA
In November 2023 we blind tasted several of our wines with Pasta Primavera. Pinot Blanc was the staff favorite with this dish. A perfect match.
